This presentation will focus on the findings of Dr. Bilfield's new book, Brewing Sustainability in the Coffee and Tea Industries, that explores the origins of the craft coffee and tea industries and how they have evolved by adopting more sustainable business models from farm to cup. The presentation will demonstrate how farmer cooperatives and their supply chains are creating social and environmental benefits through the adoption of current and emerging certification tools and business strategies. Central to the presentation will be tandem case studies of social and environmental innovation through the context of fair trade cooperatives in Guatemala and Sri Lanka. The presentation will also focus on the prospects of the specialty coffee and tea movements in food as a catalyst for forging more authentic, just, and sustainable supply chains that consider both people and the environment. 
 
 This presentation will be of great interest to coffee and tea industry professionals interested in agriculture, sustainable food systems and supply chains, the fair trade movement, sustainable development and social entrepreneurship and social innovation.
