This coffee goes through an anaerobic fermentation (lacking the presence of oxygen) for 72 hours, while still in the coffee fruit. This imparts crazy funky notes of Banana, Milkshake, and artisanal chocolate to the coffee.
It is grown at the female owned "Vergal Estate" in Colombia by Marta Bayter, and processed by her two sons, Elias and Shady. This coffee recieved a 93 point from Coffee Review.
